The recipe calls for 2 tablespoons of flour, don’t use it.
Heat 2 tablespoons of oil.
Mix the stew meat with the Oregano, Cumin and Adobo to taste, use a shaker it makes it easier. Mix well.
Sear the meat in batches.
Remove the meat and add the Cilantro and the Sofrito to the pot, scraping the bottom of the pan, add the whole Garlic. Add the Bay leaves, the Olives, Sazon and Tomato sauce. Stir until it boils a bit.
Put the beef back in, mix everything around. Then add the Carrots. Add just enough water to cover everything.
Bring to a boil for 2-3 minutes.
Lower heat and simmer for an hour. After the first 30 min add the Potatoes.
